Brussel Sprout and Apple Slaw
Brussel Sprouts- Covilli Brand Organics- Nogales, AZ

Ingredients:
1 cup brussels sprouts, stems removed and finely sliced/shredded
½ cup apple (pick your favorite variety- I like Fuji or Honeycrisp here), peeled and julienned
½ cup carrot, peeled and shredded
1 Tbs. fennel fronds, chopped
1 Tbs. dill, chopped
1 Tbs. lemon juice
1 Tbs. dijon mustard
1 Tbs. honey
2 Tbs. extra virgin olive oil
Kosher salt to taste
Procedure:
Combine shredded Brussels sprouts, apple, carrot, fennel, and carrot in a bowl and season with a generous pinch of salt.
Combine lemon juice, mustard, honey, and olive oil in a small bowl and stir thoroughly to combine.
Pour dressing over the slaw and toss to coat.
