Roasted Delicata Squash and Apples

Ingredients:

  • 1 Delicata squash

  • 1 Apple (Granny Smith or Pink Lady work well), peeled and large diced

  • ¼ teaspoon ground cinnamon

  • Pinch kosher salt

  • 2 teaspoons vegetable oil

Procedure:

  1. Preheat the oven to 425 F.

  2. Cut the delicata squash in half lengthwise. Scoop out seeds. Place the squash cut-side down cut into semicircles about ½ inch wide. 

  3. Place squash in a mixing bowl with diced apples and toss with the cinnamon, salt, and vegetable oil.

  4. Place the squash and apples on a baking sheet lined with parchment paper or foil, making sure to leave space between pieces of squash and apples. (They roast better if all the pieces aren’t crowded together.)

  5. Roast for 10 minutes, then flip the pieces over and roast another 10 minutes.

  6. Serve hot as a side dish, or allow the squash and apples to cool and toss them in a salad with hearty fall greens, nuts, blue cheese, pomegranates, and honey-mustard dressing
