Kohlrabi Slaw with Curry Yogurt Dressing

Ingredients:
2 cups Kohlrabi, peeled and cut into thin matchsticks
1 ½ cups apples, (unpeeled), cut into thin matchsticks
1 cup Carrots, peeled and cut into thin matchsticks
1 teaspoon sugar
½ cup Greek yogurt
½ teaspoon Curry powder
1 Tablespoon Honey
1 teaspoon Lime juice
2 teaspoons vegetable or canola oil
½ cup Pecans or other nut of your choice
Pomegranate seeds to garnish
Kosher salt to taste
Procedure:
Put kohlrabi, apples, and carrots in a medium mixing bowl, sprinkle with 1 teaspoon sugar and ½ teaspoon kosher salt. Mix together and set aside.
Put a very small pan on the stove on medium heat. Add 2 teaspoons of oil. When oil shimmers, add the curry powder. Turn off the heat and mix the curry into the oil.
In a small bowl, mix yogurt, honey, lime juice, and the curry/oil mix.
Add the yogurt dressing and pecans to the vegetable mix and toss to combine. Taste and adjust seasoning with kosher salt as needed.
Garnish with pomegranate seeds.
