Kohlrabi Slaw with Curry Yogurt Dressing

Ingredients:

  • 2 cups Kohlrabi, peeled and cut into thin matchsticks

  • 1 ½ cups apples, (unpeeled), cut into thin matchsticks

  • 1 cup Carrots, peeled and cut into thin matchsticks

  • 1 teaspoon sugar

  • ½ cup Greek yogurt

  • ½ teaspoon Curry powder

  • 1 Tablespoon Honey

  • 1 teaspoon Lime juice

  • 2 teaspoons vegetable or canola oil

  • ½ cup Pecans or other nut of your choice

  • Pomegranate seeds to garnish

  • Kosher salt to taste

Procedure:

  1. Put kohlrabi, apples, and carrots in a medium mixing bowl, sprinkle with 1 teaspoon sugar and ½ teaspoon kosher salt. Mix together and set aside.

  2. Put a very small pan on the stove on medium heat. Add 2 teaspoons of oil. When oil shimmers, add the curry powder. Turn off the heat and mix the curry into the oil.

  3. In a small bowl, mix yogurt, honey, lime juice, and the curry/oil mix.

  4. Add the yogurt dressing and pecans to the vegetable mix and toss to combine. Taste and adjust seasoning with kosher salt as needed.

  5. Garnish with pomegranate seeds.
