Napa Cabbage Slaw

Ingredients:

  • 1 small head Napa cabbage

  • 1 cup carrots, peeled and julienned (or grated)

  • ½ cup yellow onion, julienned

  • 2 tsp. fresh mint, finely chopped 

  • 1 tsp fresh ginger, grated

  • 1 clove garlic, smashed and minced

  • 1 Tbs. toasted sesame oil

  • 3 Tbs. rice wine vinegar

  • 2 Tbs. soy sauce

  • 2 tsp. honey

  • Toasted sesame seeds to garnish




Procedure:

  1. Rinse the napa cabbage and shake dry or spin in a salad spinner. Stack leaves and cut in half lengthwise, then cut into ¼ inch wide strips.

  2. Place cabbage, carrots, onions, and mint in a mixing bowl.

  3. Combine grated ginger, garlic, sesame oil, rice wine vinegar, soy sauce, and honey in a small bowl and mix thoroughly to combine. Make sure there are no congealed blobs of honey remaining.

  4. Pour the dressing over the slaw and toss. For best results, allow the slaw to sit for at least 30 minutes prior to eating.

  5. When ready to eat, sprinkle with sesame seeds to garnish.
