Sautéed Beet Greens

Beets -Rattlebox Farms - Tucson, AZ

Ingredients:

  • 1 bunch Beet greens, rinsed and cut into 2” lengths

  • 1 clove Garlic, smashed

  • 2 tsp. lemon juice

  • Pinch red pepper flakes

  • 1 Tbs. Extra virgin olive oil

  • Kosher salt to taste

Procedure:

  1. Heat a sauté pan over medium-high heat.

  2. Add oil and swirl the pan. When oil shimmers, add beet greens.

  3. Add a pinch of salt to the greens to heat extract some of their liquid.

  4. Continue cooking, stirring frequently, until greens soften and begin to wilt.

  5. Add lemon juice and red pepper flakes and shut off the heat. 

  6. Stir, taste, and adjust seasoning with salt as needed.
