Pickled Chard Stems

Ingredients:
1 ½ cups Swiss chard stems, chopped in ½ inch segments
¼ Yellow onion (about ½ cup), julienned
1 cup Granulated sugar
½ cup Distilled white vinegar
¼ cup Water
½ tsp. Kosher salt
2 chile pequin or chiltepin (optional)
½ tsp. Coriander seed
½ tsp. Mustard seed
1-inch piece Cinnamon stick, broken
2 whole Cloves
1 whole Star anise
Procedure:
Combine vinegar, water, sugar, salt, seeds, and spices, and bring just to a boil in a small pot.
Remove from heat and pour over chopped chard stems and julienned onion.
Refrigerate until ready to use. Best if made at least 2 days before use.
