Pickled Chard Stems

Chard -Rattlebox Farms - Tucson, AZ

Ingredients:

  • 1 ½ cups Swiss chard stems, chopped in ½ inch segments

  • ¼  Yellow onion (about ½ cup), julienned

  • 1 cup Granulated sugar

  • ½ cup Distilled white vinegar

  • ¼ cup Water

  • ½ tsp. Kosher salt

  • 2 chile pequin or chiltepin (optional)

  • ½ tsp. Coriander seed

  • ½ tsp. Mustard seed

  • 1-inch piece Cinnamon stick, broken

  • 2 whole Cloves

  • 1 whole Star anise

Procedure:

  1. Combine vinegar, water, sugar, salt, seeds, and spices, and bring just to a boil in a small pot.

  2. Remove from heat and pour over chopped chard stems and julienned onion.

  3. Refrigerate until ready to use. Best if made at least 2 days before use.
