Spicy Chard and Arugula Salad

Yield: 2 portions

Ingredients:

  • 1 ½ cups Rainbow chard greens

  • 1 ½ cups Arugula, stems removed, roughly chopped

  • ½ Granny Smith apple, julienned

  • ¼ Red onion, julienned

  • 2 Tbs. Daikon radish, sliced in 1/16 inch thin half-moons

  • 3 Tbs. Honey mustard dressing (or your favorite vinaigrette)

  • Kosher salt to taste

  • Freshly ground black pepper to taste

Procedure:

  1. Remove stems from chard and reserve for pickling. Roughly chop chard greens.

  2. Combine chopped chard, arugula, apples, onions, radish, and dressing.

  3. Taste and adjust seasoning with salt and freshly ground black pepper.
